INGREDIENTS:
1 large onion, diced
4 cloves garlic, minced
3 TBSP extra virgin olive oil
2 28oz cans crushed tomato
2 TBSP Italian Seasoning
Salt and Pepper to taste
DIRECTIONS:
Heat olive oil in a large, heavy-bottomed stock pot over medium high heat. Add onion and sauté for 5 minutes, until translucent. Add garlic and cook one minute more.
Add tomato, Italian Seasoning, and salt and pepper to taste. Heat over medium high heat until tomato sauce starts to bubble, then turn heat down to low and simmer, stirring occasionally, for one hour. Taste before serving and add more seasoning if necessary.
NOTE: If you prefer a smoother sauce, you can use tomato puree in place of crushed tomatoes. Crushed tomatoes will make a thicker, slightly chunky sauce. Also, when purchasing canned tomato products, be sure to check if they already contain salt and/or any seasonings. Some canned tomato will contain salt and basil, for example. These products are fine to use, but they will affect how much seasoning you should add. Taste your canned tomato products before seasoning, to get an idea of how much seasoning to add. Add seasonings a little at a time if you are unsure. You can taste your sauce as it cooks and add a little more seasoning each time if necessary. Remember, you can always add more seasoning, but once it’s in there, you can’t take it away!
